I have recently started T on soups and he seems to be enjoying them. There is a whole variety that could be cooked quickly. This soup is a little strong on the palate but yummy nonetheless. I am glad he could handle the flavours.
I am not a precision cook, so the ingredients are usually not measured up. Here goes the recipe:
What you will need:
- 1/2 a potato
- 1 Stalk of spring onion
- 1 Pod of crushed garlic
- Olive oil
- A little milk
- A little water
- Salt and pepper for garnish
How to make it:
- Drizzle the olive oil on the potatoes, spring onions & garlic
- Bake till cooked
- Add in the water and the milk and blend it to a smooth thick consistency
- Garnish to taste
