Potato and Spring onion soup

I have recently started T on soups and he seems to be enjoying them. There is a whole variety that could be cooked quickly. This soup is a little strong on the palate but yummy nonetheless. I am glad he could handle the flavours.

I am not a precision cook, so the ingredients are usually not measured up. Here goes the recipe:

What you will need:

  • 1/2 a potato
  • 1 Stalk of spring onion
  • 1 Pod of crushed garlic
  • Olive oil
  • A little milk
  • A little water
  • Salt and pepper for garnish

How to make it:

  • Drizzle the olive oil on the potatoes, spring onions & garlic
  • Bake till cooked
  • Add in the water and the milk and blend it to a smooth thick consistency
  • Garnish to taste
