Strawberry season’s here and I couldn’t wait to start cooking with them! I made a strawberry vanilla porridge and to my joy he ate it with much delight without any reaction to the fruit. Since this was the first time I was incorporating berries into his diet I made a sugarless strawberry compote.
Heres goes the recipe:
Boil strawberries to a thick sticky pulp in minimal water. Add in a quarter of a scraped Vanilla bean. Combine the two with Oatmeal which is cooked to a thick consistency. Serve it warm or cold, either ways its yum!
Variation: One could add a ripe banana in the mix to sweeten it up and add another flavour dimension.

Hey what oatmeal do you use? Just the regular in the market.. like the quaker oats?

I use Instant at times, but thats mostly empty calories, so I prefer using the cut oats you get in the market. Those though, you need to pressure cook.
