With the left over batter from last mornings idli ‘Eggs-travangsa’, Uttapam is what had to be next in line and to my surprise it made its way to T’s belly rather smoothly! This way he got to relish his breakfast at the table with us and this time we all ate the same thing though we ate uttapams of the regular kind ;)
Here’s what you need:
- Idli/Dosai Batter
- 1 egg yolk
- 2 Finely chopped shallots (one can use tomatoes or the traditional ingredients that go into the recipe if that works well for you)
- Grated cheese
- Salt to taste
- Til oil
Mix it all up. Add a teaspoon of oil to a hot pan and pour the batter on it spreading it out just a little. Cook un till golden brown. Serve warm
PS: I deliberately kept it thick since its easier for T to feed himself the chunks as opposed to a thinner uttapam.
