This one is a household hit with us. It works out especially well when there are leftover Chapatis. We had a baby Chapati left over from last night and what better way to recycle than the family favourite Egg Paratha.
What you need:
- 1 Chapatti
- 1 Egg yolk whisked in with a tbsp of milk
- Quarter cube cheese
- Olive oil
- Pinch of mustard powder
- Salt and pepper to taste
How it’s done:
- Whisk the cheese in with the egg
- With the oil in the heated pan, gently place the chapatti
- Pour the mix on top
- Cook for a min and fold into half.
Egg Quesadilla: One could make Quesadillas with two Chapatis, in which case after pouring the mix on the chapati place the second chapati on top. Flip on both sides until golden brown. Cut up into triangles and serve.
