‘Eggs’travaganza Week – Saturday: Rösti-Baby Style

Traditionally Rösti is a Swiss breakfast dish made with raw grated potatoes. Usually it is just the potato garnished with salt and pepper and pan fried in a large patty format which goes really well with a dollop of sour cream and chives helping on top. I’ve always loved it and this was a great way to introduce T to a new breakfast item. This Rösti recipe though is my take on the original and it gives him something other than just the potato.

IMG_6822Ingredients:

  • 1 Medium size grated par boiled potato
  • 1 Egg yolk
  • Finely chopped celery
  • Grated cheese
  • Pinch of mustard powder
  • Salt & pepper to taste

Mix all ingredients together and make a large flat patty. Pan fry in butter until golden brown. Serve warm.
