Giant Freedom Cookies

Happy Independence day my fellow Indians!

Although it’s Trilok’s second, I still consider it his first ever since he started walking around, using single words to express himself and most important of all, going to play school. Now, if that’s not a celebration of independence then what is? And what better way to celebrate it than baking some giant freedom cookies? Also, it turned out to be a fun way of introducing the colours to him. Though I doubt he gets it just yet. :)

Baking up a batch of these were super easy and fun actually. All that was needed were some basic ingredients, food colours, a good laddoo making action and a rolling pin. The end result were some yummy cookies that T could chomp on.

Ingredients:

  • 1 Egg
  • 1/2 Cup castor sugar
  • 1 Cup self raising flour
  • 1 Tsp baking powder
  • 1 Tsp vanilla essence
  • 1 Tbsp of milk
  • 250 Gms of softened butter
  • Orange food colour
  • Green food colour

Method:

  • Beat together the castor sugar, butter and eggs
  • Add the flour, milk, vanilla essence, baking powder to the mix and knead it to make a soft cookie dough
  • Let the cookie dough rest in the fridge for bout 20 mins
  • Divide the dough in three sections once you’ve pulled it out of the fridge
  • To one section add the orange food colouring, I’ve used a gel based colour, keep one section plain and to the third section add the green food colouring
  • Take a little dough at a time and roll each division into equal sized balls, compress them just a little and stack them up orange, self and green and compress them again

  • Now Get your laddoo making action going and make a giant ball out of it
  • Place the giant ball onto a parchment sheet and gently roll out to the desired size
  • Line them up on your baking tray

  • Bake on 220ºC for 20 mins or until golden
  • Serve when cool
