The 7 Healthy Chips Week, Day 01: Parmesan Crusted Spinach

With the advent of T’s first year molars, he has discovered the joy of the ultimate crunch – CHIPS! Mamma ‘cheeps, cheeps’ he says and this mamma really had to put her thinking cap on, to give into this ‘CHEEPS’ demand of his. So here it is, my experiments with veggies and turing them into chips! Some are crunchy, some not as much, but all in all they’re baked, healthy and delicious.

So, here’s Introducing ‘The 7 Healthy Chips Week’. 

I am kicking day one with our family favourite. The Parmesan Crusted Spinach Chips.

Ingredients:

  • A few whole leaves of Spinach
  • 1 Teaspoon Olive oil
  • Parmesan cheese, shredded
  • A sprinkle of salt if you are using unsalted Parmesan

Method:

  • Wash thoroughly the whole spinach leaves. Stem included.
  • Dry well with a kitchen towel
  • Rub the seasoning and olive oil onto the leaves
  • Sprinkle the shredded Parmesan on top
  • Sprinkle a pinch of salt if you are using unsalted Parmesan
  • Pop into the oven for about 10 – 12 mins on 200°C
  • Flip them over once to avoid burning
  • Remove from oven once they have started to crisp and let them rest

Tip: One can thoroughly wash their greens in a bath of diluted vinegar, (read under washing instructions, Here)

Note: Please keep a watch, for they burn super easy

The 7 Healthy Chips Week, Day 05: Batter Baked Baby Corn

These turned out to be one of those finger food items T could munch on while being his busy little self around the house. The flavours from the pasta seasoning make these little bites irresitable !!

Ingredients:

  • A few baby corns
  • 1 Teaspoon Olive oil
  • A sprinkle of cornflour or rice flour
  • Parmesan cheese, shredded
  • Salt and pepper
  • Pasta seasoning mix
  • 1 Tbsp of water

Method:

  • Cut the baby corns diagonally and make them thin
  • Create a semi-wet batter by mixing all the ingredients
  • Mix really well all the ingredients, make sure you rub the mix with a light hand
  • Pop into the oven for about 10 – 15 mins on 200°C
  • Toss them around once to avoid burning
  • Remove from oven once they have started to crisp and let them rest
  • Serve them to your toddler when cool

Note:

  • These will not remain crunchy for long so consume immediately
